Cranberry Chutney Recipe

1 lemon
1 1/2 cup water
1/2 cup cider vinegar
2 cups honey
1/4 tsp cardamon
1/2 tsp cinnamon
1/2 tsp curry pwd
1/4 tsp. grd ginger
1/4 tsp allspice
4 navel oranges
6 cups cranberries
1/2 cup golden raisins
1/2 cup diced dried apricots
1/2 cup chopped walnuts (optional)
1. grate lemon rind, juice the lemon, put juice, rind, vinegar, water, honey and all spices together in a pot.
2. grate 1 orange rind and add to pot.
3. peel oranges, slice and add to pot.
4. bring mixture to boil and cook 5 min. reduce heat to simmer and add 3 cups cranberries, raisins and apricots. Simmer 30 min. or until chutney thickens.
5. Stir in remaining cranberries and walnuts .... cook another 20 min.
6. allow to cool and chill.

I posted the above recipe back on 11/26 but the recipe was missing some ingredients. Over the years we lost the recipe so DH was winging it. I wrote to Dave and he sent me the "real" cranberry chutney.
